The story starts in 1967, when Stella Cordova — Julian's grandmother — was working at Chubbs Burger Drive-In. She purchased the place and transformed it into the Mexican eatery Colorado has loved ever since. The recipes that built our reputation? Hers.
In 1984, her grandson Julian T. Cordova stepped in to carry the torch. Same recipes. Same uncompromising standards. Just a third generation of the family making sure every burrito gets rolled the way Stella would have wanted.
Today, Julian has grown Chubbs from a single counter into three thriving Colorado locations — and now, with the launch of the Chubbs franchise brand, those time-honored flavors are ready to find new homes across the country.
